吃了北京最好吃的烤鸭后(1949全鸭季),顺便打包鸭架和吃剩的烤鸭回家做香粥。用鸭骨熬制鸭汤再做粥,味道一流After eating the best Beijing roast duck (1949 roast duck shop), we asked for the duck cage so that I can make duck porridge. Duck porridge made from fresh duck broth is simply fabulous.

用料

1只 1 piece 烤鸭鸭架 roast duck cage 适量 several pieces 烤鸭肉 roast duck meat
1把 1 handful 白米 rice 少许 1 teaspoon 香麻油 sesame oil
少许 2 dashes 白胡椒粉 white pepper

做法

  • 1

    把鸭架切成块。如果没有剩余烤鸭肉片,可以从鸭架取下鸭肉备用Cut the duck cage into pieces. If you do not have extra duck meat, simply replace it with meat that you can remove from the duck bones

    把鸭骨和肉去皮,加入一锅热水,大火煮沸Remove the skin from the bones and duck pieces, add into a boiling pot of water and boil on high heat

    把鸭肉片切成细条Cut the duck pieces into thin strips

    用热水稍微烫一下,倒掉去油Use hot water to rinse the duck strips to remove excess oil

    鸭汤煮到奶白色备用Boil soup until it turns milky white

  • 6

    将鸭汤滤掉骨头备用Sieve the duck soup and set aside

  • 7

    把米用水洗好后,倒掉水,加入鸭汤Wash the rice with water, pour away the water and add in the duck soup

    把米煮成粥后,加入切好的鸭肉When the rice gets cooked into porridge, add in duck strips

  • 9

    粥再次沸腾后,加入少许香麻油和白胡椒粉,便能倒入碗内享用When the porridge boils again, add in one teaspoon of sesame oil and two dashes of white pepper. Serve hot in a bowl
